Baked chicken with sundried tomato on top and salad and sweet potato!
I don’t fuck around with salad bars! This is from Fresh City! SOOOO GOOD. I ate this whole thing…. I’m a beast.

In the mix:
- Spring Mix
- Tomatoes
- Cucumbers
- Black beans
- Corn
- 2 small hard corn tortillas, broken up
Topped with:
- Salsa
- Sundried tomato and basil hummus
- Plain yogurt

Dinner tonight was a big ‘ol salad with spring mix, cukes, tomato, yellow summer squash, kidney beans, and ff italian dressing. I also had some salmon for protein and some butternut squash for carbs :)

The above turned into this:
I know, I know, sweet relish on fish sounds gross, but don’t knock it til you try it! I also LOVEEE ketchup on my squash. ANDDDD I drank a Mojito! Crystal light Mojito that is!
The taste is VERY sweet, I had to water it down a bit more, but it’s gooood. I ate about half of the salad, gotta save room for dessert! I think I know just the thing ;)

- HUGE bag of spring mix
- 5 Cukes
- 7 Pluots (I ate one already :)
- 7 Peaches
- 7 Oranges
- 1lb Grapes
- 6 Big Tomatoes

Yes, I am still sporting my free “manicure”. Now excuse me while I go make a giant salad for dinner :)
My dad met me in Fenway this afternoon to take me out to lunch before he went to the Red Sox game. We went to a place called La Verdad and I was in love!
I ordered the Mexican Chopped Salad:
The description: “Tostada topped with romaine lettuce, avacado, salsa mexicana, corn, pickled red onions, chayote, jicama, red radish, queso fresco, pepitas, black beans, guajillo chile, and agave nectar vinaigrette”
IT WAS PHENOMENAL!
We also ordered some Plaintain Chips:
Which were also amazing!

I ate half the salad and a few of the plaintain chips and brought the rest to work with me for dinner! This place was so good, I will def be going back! I also decided I’m gonna start cooking with plantains!
Romaine Lettuce Wraps

Filled with healthy tuna salad, kidney beans, and chopped carrots (stole some from my roommate, shh)!

Put the tuna mixture on top then fold the bottom stem inwards, then fold the two sides, wrapping the insides up!


Who needs bread?! Not me! :)
