Carrot Cake Oatmeal with “Icing”

Carrot Cake Oats are the bomb!

Ingredients:
1/2 cup rolled or old fashioned oats
1/2 cup almond milk, soy milk, or skim milk (whatever you have)
1/2 cup water
1/2 cup of grated carrot 
1 tsp vanilla
1 tsp cinnamon 
1 tsp ginger
1 tsp brown sugar
2 tbsp nonfat plain yogurt (icing)
1 tbsp sugar free syrup (or 1 tsp maple syrup/ icing)
 

Directions:

  • Combine oats, milk, water and carrots in a saucepan and turn up to medium heat and stir occasionally until all the liquid is absorbed. 

NOTE: I did not add the carrots in with the liquid, I wanted to add them after for crunch, but I think next time I will add them with the water. (Do whichever you’d like)
 

  • When the oats are done, add in brown sugar, cinnamon, ginger, and vanilla. (or any spices you have, all-spice would be good)

 

  • In my case, I added in the carrots next

  • I let the oats cook for another minute while I made the “icing” by stirring together 2 tbsp of non-fat plain yogurt with 1 tbsp sugar free syrup (and a little more cinnamon ;)

  • Pour the icing on top!

  • I added another tsp of brown sugar, and another sprinkle of cinnamon
  • OH, and some Better’n Peanut Butter because I can’t seem to eat anything without it! lol 

 

Add any toppings you want! Great toppings for this would be: 

  • Pecans, walnuts, coconut flakes…etc!

Carrot Cake craving solved. Does anyone else love carrot cake or am I the only one? lol
